I was invited to Perfect Italiano’s Masterclass yesterday at Palate Sensations. Conducted by Chef Lino Sauro of Gattopardo, we learnt how to make 3 dishes using Perfect Italiano’s cheese.

My favourite dish was the Wonton Ravioli with Soya Marinated Prawns & Parmesan Fondue. It’s simple to execute and tastes great. Here’s the recipe so you can cook for your loved ones and good friends:
Wonton Ravioli with Soya Marinated Prawns & Parmesan Fondue (recipe reproduced with permission from Perfect Italiano) Serves: 4 Preparation time: 20 mins Cooking time: 10 mins Ingredients: 100 g Perfect Italiano Parmesan Grated Cheese 100 g Anchor unsalted butter 20 pieces of wonton skin (square shaped) 20 g light soya sauce 30 g olive oil 2 cloves of garlic (minced) 110 g full cream milk 1 stalk of spring onion 20 g white wine 10 pcs of tiger prawns Method: 1) Peel & marinate prawns with soya, garlic, olive oil & spring onion. 2) Make Parmesan fondue by mixing Perfect Italiano Parmesan Grated Cheese, milk, butter and white wine. 3) Warm up mixture in a bain-marie till creamy and season with white pepper. 4) Fill wonton with marinated prawn. Seal the sides (I used a beaten egg as “glue”). 5) Cook in boiling water for 3 minutes. Drain when done. 6) Pour fondue onto serving plate & arrange ravioli on it. 7) Season with Perfect Italiano Parmesan Grated Cheese and spring onion. Serve immediately. SFF’s Difficulty Rating: 2 out of 5 (stir the cheese fondue constantly to prevent clumping)
